The company was founded by Stephen Knox in 2004, but the Knox family has been farming the land at Mill Close, near Bedale, for three generations. Stephen is determined to make that four, having developed the business into a sustainable enterprise that his son, James, will one day take over.

What started as a weekly stall at a the Norths first farmers market in Northallerton has developed into a full-service catering butchery supplying high-end restaurants and hotels - including Leeds United Football Club, Swinton Park and De Vere Oulton Hall - with the finest produce.

Now the company occupies a 9,000 square foot factory facility within a 50,000 square foot building complex constructed using sand and gravel from the immediate area. The factory includes a multi-species cutting facility, a chilled rail room with a capacity for 200 sides of beef and a 70-tonne capacity cold store along with processing and cooking facilities for ready meals.

Yorkshire Dales Meat Company has a very strong focus on products that capture the traditional tastes of the region; and the companys traditional hanging methods ensure that its award-winning steaks are tender and full of flavour. Stephen Knox is very passionate about supporting Yorkshire farmers and, where possible, sources a large proportion of the companys produce from the Yorkshire Dales.

Yorkshire Dales Meat Company regards high quality staff as an important asset to its business. Its talented butchers are trained in-house to ensure the highest quality produce that capture the truly authentic taste of the county.

Yorkshire Dales Meat Companys own heard of cattle are bred at Mill Close Farm and are reared on a natural diet of barley and beans grown on the farm for optimum quality and flavour. Raised on clover rich pastures until weaning at 10 months of age, the cattle are then moved to open-sided yards for finishing, helping reduce stress and respiratory diseases.

The company doesnt rush the cattle: by letting them mature naturally, the animals produce better tasting meat. This care and attention is evident in the meat they produce, from hand-made burgers to the finest cuts of beef, pork, lamb and poultry.
