This dish is originally from Yum Pla duk foo which is deep fried cash fish with mango salad. It's a very light and healthy dish and only takes a minute to make.

INGREDIENTS:

Salmon Mamoung
Salmon fillet 250g
Hard mango
Shallots
Fresh red chilli
Spring onion
Roasted peanuts

Dressing
Fish sauce 1 tsp
Lime juice 1 tsp
Palm sugar 1 tsp


METHOD:

1. Chop salmon into bite size cubes to make it quicker to cook
in the pan (about 5 minutes).

2. Mix all the dressing ingredients in a bowl.

3. Mix in the chopped fine chilli, shallots and spring onion into
the dressing.

4. Peel mango skin and chop very fine to fill about 2 tablespoons
then mix into the dressing.

5. Top the mango salad onto the salmon cubes.

6. Garnish with roasted peanut and coriander (optional).
